Heat oil in the base of a heavy skillet over moderate heat, add in the garlic and cook for a few moments till lightly coloured.

Add in the tomatoes + chillies along with Pippies and Prosecco. Cover with a lid and steam for 2 to 3 minutes or until Pippies have opened. Remove lid, add in the cooked pasta, chives, mint and cooked lobster meat, mix well to coat the pasta and serve immediately.

3/4 cup AFC Cook with me extra virgin olive oil

4-6 cloves garlic thinly sliced

1 cup Prosecco

1 pkt Antiche Tradizoni di Gragnano spaghetti (cooked til tender)

2-3 long chillies

1 punnet cherry tomatoes split in half

1 punnet @tomberry_aus (tomatoes)

1 bunch of chives finely sliced

1/2 bunch mint leaves (picked + washed)
